My Go-to Dish
When pressed for time, it’s a good idea to have a couple of recipes in the back of my mind for potluck-type events.
Like today. Shane had an end-of-year celebration luncheon and was looking for ideas on what to bring. He was instructed to bring “light fare.”
Ohhhh, hummus. Remember how much I love it? {and remember the time I decided to add broccoli to my hummus?}
Hummus is a great potluck dish. It’s light (but can be filling in the right quantity), easily transportable in a veggie/dip tray, is quick to prepare, can be paired with a variety of items, and is quite tasty.
Channeling my favorite (and most expeditious) hummus recipe, I sprang to action. After a quick trip to the store and Farmer’s Market in Chestertown, we had all the fixin’s for such a treat: chick peas, carrots, celery, and…turnips.
Have I mentioned my recent affinity with turnips? Especially these little white ones from the Farmer’s Market. They’re so tasty raw! I’ll either slice them or julienne them.
What…your Cinco de Mayo party doesn’t feature avocado cake? I’d demand a refund. This cake is vegan, and instead of using the vegetable oil in the recipe, I added some of my homemade applesauce {which I canned last fall!}. Can’t wait to dive in!

I had a chocolate avocado cake for my birthday this year (thanks to an awesome best friend) and I highly recommend it. It was the best chocolate cake I’d ever had. 🙂 Enjoy!
