Blueberry Lemonade Popsicles

Over the weekend, I found a little extra time on my hands. What better way to spend it than baking, cooking, and creating fun new recipes?

Like these blueberry lemonade popsicles

After cleaning out the freezer to make room for next year’s produce stash, I found a bag of frozen blueberries from last year.

Time to use them! I purchased a popsicle mold set at the beginning of the summer, and this is the first chance I’ve made to create popsicles.

After thawing these, I started by just mashing them.

After unsuccessfully mashing them, I poured the blueberries into a pan and heated them instead. This helped with breaking down the blueberries to help them release their juices.

That’s more like it! Mushy blueberries.
Some popsicle creations call for white grape juice, but I wanted to use lemonade instead, especially since I love the combination of lemon and blueberries.

No strict measurements here, I basically did 2 parts lemonade to 1 part mushy blueberries, but maybe it was a little more of each. I just mixed the two!

I just poured the mixture right into the molds, added the tops and stuck them in the freezer. It doesn’t get easier than this for a sweet treat featuring Lockbriar blueberries!
After making the popsicles (which took all of 15 minutes), I also whipped up a Chicken Zucchini casserole {which will be perfect for Shane while I’m traveling this week}
and some carrot soup featuring carrots from the homestead!

Can’t wait to dig into those popsicles! Next I think I’ll try a blackberry or watermelon popsicle mix…
