Reader’s Request: Gluten-free Recipe Round-up
I received this request from a special reader recently:
“I’ve been hunting gluten-free recipes for lunch and dinner forever, and most recommend these wonky and fancy ingredients that you can find at a really obscure health food store. And I’m getting bored with the typical rice+(blank) meal. You are good at keeping it simple with cooking, and I was wondering if you could make a blog post on your favorite and easy dinner(s) that happen to be gluten-free. I would be so thankful!”

Let me be clear: I’m not advocating a gluten-free diet for those who have not been diagnosed with celiac disease.
What the heck is gluten, anyway? I found this link from gluten-free girl incredibly helpful.
Now my request to you — if you are following a gluten-free diet, what’s your feeling on bread replacement products (things like Udis, or Bob’s Red Mill products)?
For example, when I was a vegetarian, I didn’t like the thought of eating a “meat replacement” product, like tofurkey or Morning Star products. To me, if I wanted to eat chicken, I would’ve eaten chicken, not something created to taste, look, and smell like chicken. Am I crazy? Tell me your thoughts!
